  • 4 bell peppers (tops cut off, seeded)
  • 1 lb ground beef
  • 1 cup cooked rice
  • ½ onion (diced)
  • 2 clove garlic (minced)
  • 1 cup canned diced tomatoes
  • 1 cup tomato sauce
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella
  • ¼ cup Parmesan cheese (grated)

How to Make It

    Preheat oven to 375°F. Blanch peppers in boiling salted water 3 minutes. Drain.

    Brown beef with onion and garlic. Drain fat. Add tomatoes, Italian seasoning, salt, and pepper.

    Stir in rice and half the tomato sauce. Cook 2 minutes.

    Spread remaining tomato sauce in a baking dish. Fill peppers with beef mixture and place in dish.

    Top with mozzarella and Parmesan.

    Bake 30-35 minutes until peppers are tender and cheese is bubbly.
