Ingredients

4 servings
  • 12 oz Chinese noodles or spaghetti
  • ½ lb ground pork
  • 3 tbsp tahini or sesame paste
  • 2 tbsp soy sauce
  • 2 tbsp chili oil
  • 1 tbsp rice vinegar
  • 3 clove garlic (minced)
  • ½ tsp Sichuan peppercorns (ground)
  • 1 tsp sugar
  • 3 tbsp ya cai (Sichuan preserved vegetables)
  • ¼ cup green onions and crushed peanuts

How to Make It

    Make sauce: whisk tahini, soy sauce, chili oil, vinegar, garlic, Sichuan pepper, and sugar. Thin with warm water to a pourable consistency.

    Cook noodles al dente. Drain and rinse.

    Cook pork in a wok until crispy and browned. Add ya cai and cook 1 minute.

    Divide noodles into bowls. Spoon sauce over noodles.

    Top with crispy pork, ya cai, green onions, and crushed peanuts.

    Mix everything together before eating.
