  • 2 cup heavy cream
  • 1 cup whole milk
  • cup sugar
  • 2 ¼ tsp gelatin powder (1 packet)
  • 3 tbsp cold water
  • 1 ½ tsp vanilla extract
  • 1 ½ cup mixed berries (for coulis)
  • 2 tbsp sugar (for coulis)
  • 1 tbsp lemon juice (for coulis)

How to Make It

    Sprinkle gelatin over cold water. Let bloom 5 minutes.

    Heat cream, milk, and sugar until sugar dissolves and mixture steams. Do not boil.

    Remove from heat, add bloomed gelatin and vanilla. Stir until gelatin dissolves.

    Pour into 6 ramekins. Refrigerate 4-6 hours until set.

    Make coulis: simmer berries, sugar, and lemon juice 5 minutes. Strain.

    Unmold onto plates and spoon berry coulis around.
