Miso Glazed Black Cod
Nobu's famous dish — black cod marinated in sweet white miso for 2-3 days, then broiled until caramelized and lacquered. Impossibly silky fish.

- 4 whole black cod fillets
- ½ cup white miso paste
- ¼ cup mirin
- ¼ cup sake
- 3 tbsp sugar
- 2 tbsp pickled ginger
How to Make It

Make marinade: combine white miso paste, mirin, sake, and sugar in a saucepan. Heat gently until sugar dissolves and alcohol cooks off, about 5 minutes. Cool completely.

Coat black cod fillets completely in marinade, cover, and refrigerate 2-3 days. The longer the better.

When ready to cook, scrape off excess marinade (it will burn if left on).

Preheat broiler to high. Place fish on foil-lined baking sheet.

Broil 8-10 minutes until surface is deeply caramelized and fish flakes easily. Watch carefully — the sugars burn fast.

Serve with steamed rice, pickled ginger, and a garnish of pickled cucumber.
