- 8 lamb rib chops
- 3 clove garlic (minced)
- 1 tbsp rosemary (chopped)
- 1 tbsp Dijon mustard
- 2 tbsp olive oil
- ½ cup fresh mint (for sauce)
- 2 tbsp white wine vinegar
- 1 tsp sugar
- 1 tsp salt and pepper
How to Make It

Make mint sauce: finely chop mint and mix with vinegar, sugar, and a pinch of salt. Set aside.

Mix garlic, rosemary, mustard, olive oil, salt, and pepper. Rub over lamb chops.

Let rest at room temperature 30 minutes.

Heat a cast iron skillet over high heat. Sear chops 3-4 minutes per side for medium-rare.
