- 2 cup canned chickpeas (drained, liquid reserved)
- ⅓ cup tahini (good quality)
- 3 tbsp lemon juice (freshly squeezed)
- 2 clove garlic
- 3 tbsp ice water
- 2 tbsp olive oil (plus more for serving)
- ¾ tsp salt
- ¼ tsp cumin
- 1 tsp paprika and parsley (for garnish)
- 4 pita bread (warmed, for serving)
- 1 cucumber (sliced, for serving)
- 2 carrots (cut into sticks, for serving)
How to Make It

Process tahini, lemon juice, and garlic in a food processor 1 minute until creamy.

Add chickpeas and blend 2 minutes. Add ice water and blend another 2 minutes until very smooth.

Season with salt and cumin. Taste and adjust lemon.

Spread on a plate, creating a well in the center. Drizzle with olive oil.

Garnish with paprika, parsley, and a few whole chickpeas.
