- ½ red onion (thinly sliced)
- ½ cup Kalamata olives
- 6 oz feta cheese (block, not crumbled)
- ½ green bell pepper (sliced)
- 3 tbsp olive oil (extra virgin)
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- ½ tsp salt and pepper
- 1 crusty bread (for serving)
How to Make It

Combine tomatoes, cucumber, onion, olives, and bell pepper in a large bowl.

Whisk olive oil and vinegar. Pour over vegetables and toss gently.
