- 3 eggs
- 1 tbsp butter
- ¼ tsp salt
- ⅛ tsp white pepper
- 2 tbsp shredded Gruyère
- 1 tbsp fresh chives (minced)
How to Make It

Crack eggs into a bowl and beat vigorously with salt and pepper until combined.

Melt butter in a non-stick 8" skillet over medium-high heat until foamy.

Pour in eggs. Immediately start stirring with a rubber spatula while shaking the pan.

When eggs are barely set but still glossy, stop stirring. Sprinkle cheese along the center.

Tilt the pan and use the spatula to roll the omelette into a log shape.

Slide onto a plate, seam-side down. Garnish with chives. Serve immediately.
