Breakfast Burritos
Scrambled eggs, crispy sausage, peppers, and melted cheese wrapped in a warm flour tortilla. Meal-prep friendly — make a batch and freeze them individually.
Ingredients
- 8 large eggs
- ½ lb breakfast sausage (or chorizo)
- 1 small bell pepper (diced)
- ¼ cup onion (diced)
- 1 cup shredded cheddar cheese
- 4 large flour tortillas (10-inch)
- ¼ cup sour cream (optional)
- ¼ cup salsa
- 2 tbsp butter
- ¼ tsp salt
How to Make It

Cook sausage in a skillet over medium-high heat, breaking it apart, until browned and cooked through, about 5 minutes. Remove to a plate.

In the same skillet, sauté bell pepper and onion over medium heat until softened, about 4 minutes. Remove to the plate with the sausage.

Whisk eggs with salt. Melt butter in the skillet over medium-low heat. Add eggs and scramble gently, folding slowly with a spatula, until just set and still slightly glossy. Remove from heat.

Warm tortillas one at a time in a dry pan or over a gas flame. Layer eggs, sausage mixture, and cheese down the center of each tortilla.

Fold in the sides, then roll up tightly. Toast the burrito seam-side down in the warm pan for 1–2 minutes until sealed. Serve with salsa and sour cream.
