- 2 ½ lb beef chuck (cut into 1.5" cubes)
- 2 onions (diced)
- 3 clove garlic (minced)
- 3 tbsp sweet Hungarian paprika
- 1 tbsp smoked paprika
- 1 tsp caraway seeds
- 2 cup beef broth
- 1 cup canned diced tomatoes
- 2 red bell peppers (diced)
- 2 tbsp lard or vegetable oil
- ½ cup sour cream (for serving)
How to Make It

Brown beef in batches in lard. Remove.

Cook onions slowly in same pot until very soft and beginning to caramelize, 15 minutes.

Remove from heat, add paprika and caraway seeds — paprika burns easily.

Return to medium heat. Add beef, garlic, tomatoes, peppers, and broth.

Simmer covered on low heat 1.5 hours until beef is very tender.

Season generously. Serve over egg noodles or spaetzle with a dollop of sour cream.
